Albondigas

Spanish for meatballs, from the Arabic al-bunduq meaning hazelnut - a reference to the small round shape. In Mexico, albondigas always refers to a soup of rice-studded meatballs simmered in tomato broth with vegetables. In Spain, the term describes meatballs served in a thick paprika-tomato sauce.
