Bakso

Indonesian meatballs with a springy, bouncy texture from lean beef processed cold with tapioca starch or cornstarch and ice. Bakso is sold by street vendors (kaki lima) and restaurants across Indonesia. When served in clear broth with noodles, greens, fried shallots, sambal, and kecap manis, the bowl is often called mee bakso.
